The 9" Inch (22cm) Dexter Traditional Filleting Knife is designed thin and flexible for optimum control and precision. 

Designed to be used with fish, the knife glides effortlessly between the skin and top layer of meat providing an even clean cut. 

Made in the USA, Dexter uses their own proprietary steel called DEXSTEEL™, a mix of high-carbon stainless steel and high-alloy steel which enhances sharpness, edge holding capabiltiies, corrosion resistance and offers easy re-sharpening. 

The blade holds a very sharp edge, rarely requiring re-sharpening. When the knife needs to be re-sharpened it will sharpen to the same sharpness as it was before.
